Mocktails for PaRtYs

Ingredients per person

3 oz Pineapple juice
3 oz Orange juice
3 oz Lime juice

8 dashes Angostura bitters
6 oz Fizzy Lemonade
Crushed Ice

Passion Fruit Mocktail Recipe - a Non Alcoholic Drink ( Mocktail )

Passion Fruit Mocktail Recipe is a non-intoxicating beverage. The word 'Mocktail' is a derivative of two words - 'mock' meaning a copy or imitation of something and the word 'cocktail' meaning a mixed drink. A Non-alcoholic cocktail drink is also referred to as a Virgin Cocktail. The Passion Fruit Mocktail Recipe does not contain any intoxicating alcohol. A healthy and tasty cookie

If you're thinking that "Oats are only for health freaks", I think you're wrong! The crunchiness of oats is simply inevitable in this simple recipe. Not to mention, the sweetness of the raisins just compliments the oats like glue to paper.

When mixing water to the wet batter (step 3), it may look as if it will never combine. Remember, butter is a form of fat, and fat + water don't mix that easily. All you have to do is just keep mixing until it forms a smooth, slightly runny mixture. When mixing oats and sifted ingredients, its best to mix till just combined because working the gluten too much may harden the cookie when it bakes.

Baking the cookies at a moderate oven need not take too long, especially for these delicate cookies. I may suggest an extra minute or two, but not to the extend of 15 minutes. It'll brown too much and burn the raisins. When removing the cookies, it may appear to be soft, but it'll get to its crunchy state after leaving it on the wire rack for a while.

You can also substitute raisins for mixed peel, dried cranberries or even better, chocolate chips for the extra indulgence. As you come to see the recipe, I would actually suggest that you use less than the amount of sugar stated. For my case, I did cut less than 1/4 cup of sugar because the sweetness of the raisins is good enough to exhilirate the taste of the cookie. But if you prefer a sweeter cookie, by all means! You can even use honey for the rustic taste. Just substitute 1/4 cup of sugar with honey. Not too much though! You don't want the honey to take over the taste of the authentic oatmeal raisin cookie, do you?

Oatmeal Raisin Cookies
Recipe makes : 50-60 cookies
Ingredients :
  • 1 cup wholemeal flour
  • 1 1/2 cup brown sugar
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup butter
  • 1 egg
  • 1 1/2 tsp vanilla essence
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup of water
  • 3 cups rolled oats or quick cooking oats
  • 1 cup raisins
Preheat the oven to 175 degrees Celcius. Sift the wholemeal flour, salt, baking soda, cinnamon and nutmeg into a bowl and leave it aside.Beat the butter and brown sugar till fluffy and creamy.Add egg and vanilla essence to the butter mixture. Beat till just combined. Then, add water and mix. Pour in sifted ingredients into the bowl and mix. Add the oats, and finally the raisins. Mix till just combined.Roll the batter into small rounds and flatten it onto a sheet of baking paper. Bake for 10-12 minutes until slightly brown. Be aware that the cookies do not expand that much. Flattening it will add the crunch to the cookie.Cool on a wire rack and munch away!

Easy homemade dessert


Apple Crumble




Apple crumble is one of the simplest desserts I have ever come across to make. Apple crumble consist of cooked apples as the base and a crumbly top. To begin making your own apple crumble, you first need these ingredients:
· 50g rolled oats
· 50g rice flour
· 35g butter, cold and cut into cubes
· 50g brown sugar
· 400g granny smith apples, peeled, cored and cut into small chunks.
· 1 teaspoon of cinnamon
· 1 tablespoon sugar
· 1 dessertspoon of water


First you need to peel the apple, take out the core and cut the apple into small chunks and place them into saucepan. Add the sugar, water and cinnamon. Cook the apple for 5 minutes at medium heat. Once the apple is done, let it cool down and place them into a baking dish. Then preheat the oven to 180 degree Celsius.



For the crumble, mix the rolled oats and rice flour into a bowl. Place the butter cubes into cubes and with your fingers, start incorporating the butter into the mixture. Then add the brown sugar into the mixture and start mixing until it forms a crumbly texture. Place the crumble over the apples and spread it out evenly. Place the baking dish into the preheated oven and bake for 20 minutes or until the crumble turns golden brown.
You may serve this with either custard sauce or a single scoop of vanilla ice cream.

Valentines Special in KDU

In this lovable month of February, we had organized a charity event on the romantic week of the year at KDU SQUARE. We carried out 5 different projects on that week itself and they are Valentines Charity Auction, Love Potion, Cupid Magic Beans, Valentines Roses and Wishing Tree. We started off with the Love Potion and Cupid Magic Beans. Cupid Magic Beans are actually red beans with words laser on it.

Before the week of Valentines, we had to make preparations where it was held in a beautiful Saturday morning where most of them had to sacrifice their Saturday to wake up early to help. Each member were given different task where some help to prepare the Cupid Magic Beans. Some help to do the cutting and drawing of the love shape. The sewing of the Valentine Roses was one of the most difficult task.










The preparation was a good starting for the members because the Valentine project is our 1st project working and cooperating together. The preparation ended about 6 pm where most of the task had been accomplish.


THE LOVE POTION

The 1st task of the week, we carried out the Love Potion project. It consists of 5 different types of drinks which represent relationship which are Attraction, Commitment, Romance, Passion and Intimacy. Romance and Passion are made from fresh fruit juices, where as, Commitment, Attraction and Intimacy are mocktails. The responds of the drinks was good and we manage to sold all the drink.



THE AUCTION

Other than just selling roses and drinks, we have try something new for a chance like auctioning students and lectures of SHTCA where our beloved mother Wong was one of the participants. The auction was the most well respond for our Valentine project and was held for 2 days. The auction was held about 12 pm - 2 pm at the KDU SQUARE. During the 2 days, the cafeteria was crowed with many students of KDU and the responds towards the auction was good where student from other Courses help to rise the fund. Some of our SALE has reaches the amount that we didn't experted.





The Valentine week was a very sucessful and the responds toward it was unimaginable where students helped to rise funds to aid others who needed help. This project is very meaningful for the members of Grapevine because is our 1st task working togather as a team and we had accomplish it togather.
